Erin and her team went to great lengths to get Lucy Lawless’s delicious “I hate cooking” frittata recipe.

Going to Lucy’s home to shoot her for the book required a very quick change of plans, Erin explains.

“We were shooting with [women’s Black Sticks captain] Kayla Whitelock down in Palmerston North, and then Lucy calls us, ‘Yup, I can do it! See you tomorrow in Auckland at 11.30.’”

After Erin and the crew shared a brief moment of panic, they hatched a plan to get back up to Auckland in time. After all, it was Lucy Lawless, and Erin and Dick had been trying to find a time for her to cook her recipe for weeks and weeks.

“We were like, ‘Oh, okay! Well, if Lucy can do it then, then we’ll make it happen!’ So we ditched the rental car we were supposed to drive back up in, all booked flights and made it to her place on time the next day. And she was absolutely lovely! It was so worth it.”

 

The I-hate-cooking frittata

Serves 2
- 6 eggs
- Milk, for mixing
- Salt and freshly ground black pepper, to taste
- Oil or butter, for cooking
- 1 onion, finely chopped
- Small bunch silverbeet, stalks removed and leaves finely chopped
- 50g creamy goat’s cheese, crumbled
- Anything else you have to hand that you’d like to add, for example chopped leftover cooked potatoes, ham and/or capsicum etc (optional)
- 2 tomatoes, sliced or handful cherry tomatoes, halved
- Handful grated tasty cheese
- Green salad, to serve
1 Place the eggs in a bowl with a splash of milk and season with salt and pepper. Beat together and set aside.
2 Heat some oil or melt some butter in a large frypan over medium-high heat. Add the onion and cook for a couple of minutes, then add the silverbeet and cook, stirring, until soft.
3 Preheat the grill. Reduce heat to medium and add the egg mixture. Cook for about 3 minutes, then add the goat’s cheese and any other ingredients you want to add, if using.
4 Top with the tomatoes. Once the frittata is starting to gel on the sides and pulling away from the pan a little bit, you will know it’s time to add the tasty cheese and pop it under the preheated grill.
5 Watch it carefully! The frittata should start to puff up and the grated cheese will go golden brown.
6 When it’s perfectly done, take it out and leave to cool a little before cutting it – if you cut it too soon, it will deflate like a soufflé. Serve it with a green salad.

    Lucy Inspired Recipe in Cooking 4 Change Book Released 26 August 2016

    Lucy has donated a frittata recipe to a new New Zealand book “Cooking 4 Change” which is due to be released on 26 August.

    We put 101 Kiwi celebrities, their favourite recipes, the heartfelt stories behind them, and some awesome design from iconic artist Dick Frizzell into a (completely metaphorical) mixing bowl and came up with the incredible Cooking 4 Change Cookbook.

    Profits from the sales go to four hardworking local charities, and support the Cooking 4 Change Foundation in their mission to get access to good food for everyone and create a world without hunger.

    Cooking 4 Change: Famous Kiwis Want Your Help to Kickstart NZ Celebrity Charity Cookbook

    It’s no secret that Kiwis love a home cooked meal - and New Zealand artist Dick Frizzell’s latest project will see some of the country’s most-loved celebrities share their all-time favourite dishes to raise money for local charities.

    The project, Cooking 4 Change, features a multitude of famous Kiwis on board to share two signature dishes. 101 celebrities have put up their hand to be part of the project, including Hilary Barry, Tiki Taane, Robyn Malcolm, Sam Neill and Stan Walker – just to name a few.

    All profits raised from the sale of Cooking 4 Change books, available June 2016, will be donated to longstanding and respected charities Auckland City Mission, Paw Justice, The Starship Foundation, and Leukaemia and Blood Cancer New Zealand.

    “As a lover of making art accessible - and a good home-cooked meal - I wanted to find a way to give back to some of our hardest-working charities, as well as create an iconic cookbook at the same time,” Dick says, “But we are going to need some help to get the idea off the ground.”

    To bring the project to life, the Cooking 4 Change team want to invite New Zealanders to be a part of the journey by becoming a Kickstarter campaign ‘backer’.

    A Cooking 4 Change Kickstarter campaign will kick off on Thursday 14 May 2015 with the aim of raising $28,000 to cover production costs including photography, design, printing and writing.

    Backers will receive rewards ranging from acknowledgement in the book to tea towels, aprons, t-shirts, limited edition Dick Frizzell prints and the opportunity to meet Dick himself in his studio.

    In true New Zealand style, Cooking 4 Change is a project that will showcase the amazing results Kiwis can achieve when we all work together – as well as 202 tried-and-tested recipes from our most-loved celebrities.

    “The point is not to create an elaborate, gourmet cookbook that everyone will drool over but never have the ingredients or time to make - but to offer a diverse selection of food that real New Zealanders know and love,” Dick Frizzell says.

    “We want Cooking 4 Change to reflect New Zealand’s diversity in flavour, people and personality, and have pride of place on Kiwi bookshelves for many years to come,” he continues.

    Cooking 4 Change cookbooks will be available to purchase for RRP $59 from Whitcoulls, The Warehouse and other New Zealand book retailers in June 2016.

    Xena: Warrior Princess is a rollicking, ridiculous B-Movie transformed into an engaging quest for redemption for the titular warlord turned hero, and there’s a good reason it’s become an enduring cult series. Packed with all the over-the-top action, slapstick comedy, and scenery chewing you’d expect from a midnight movie, Xena holds up surprisingly well, thanks in no small part to creator Rob Tapert of Evil Dead fame, whose Renaissance Pictures (founded alongside none other than Sam Raimi and Bruce Campbell) backed the series along with its sibling show, Hercules. With the strength of that behind-the-scenes creative support and a star-making lead performance from the ever-fabulous Lucy Lawless, Xena was able to back up a rich mythology and sometimes rather dark narrative with impressive production value and consistency.

    Ash Vs Evil Dead Season 2 Premiere Date October 2

    Starz said today at TCA that the sophomore seasons of its original Ash vs. Evil Dead will premiere on October 2. An extended episode of Ash will start at 8 pm.

    The 10-episode Season 2 of Ash vs. Evil Dead sees Ash (Bruce Campbell) forced to leave his cushy retirement in Jacksonville, return to his hometown of Elk Grove, MI, and mount up once again to face the Evil Dead. This time, he’ll have to form an uneasy alliance with his former enemy Ruby (Lucy Lawless) as Elk Grove becomes the nucleus to the most dangerous horror Ash has faced.
